Irish moss (Chondrus crispus) is a fan-like seaweed growing up to 6 inches (250 mm) high on rocks in tidal pools along the northern Atlantic. It is harvested to make carrageenan, a thickening agent for jellies, puddings, and soups, and is a traditional herbal remedy in Ireland.

Like its cousin sea moss (Eucheuma spinosum), you can find it in red, yellow, or purple colors. You can use it to make Irish moss gel and add it to dishes as a thickening agent.
